Ground turkey casserole

Today was a beautiful day! John had signed us up for a photography class at 11am this morning down at the prudential building. We decided to drive down since we were running a bit late and the red line isn't working from Davis to Harvard. Once we got down there we met up with our class which only had 4 people in (including us). We learned different functions of the camera aperture, white light, ISO, ect. It was very helpful but only if I will remember all of this in 2 hours!

Once home from the photo class I realized I didn't really have to much to make for dinner. I had 1/2lb of ground turkey in the fridge so I googled ground turkey recipes. And decided on combining a couple of recipes to fit what I had on hand to make a casserole. Here's what I ended up using:
  • 1 can of no salt added diced tomatoes
  • yellow onion diced
  • garlic
  • crushed red pepper
  • ground turkey
  • a little Parmesan
  • mozzarella  
  • pasta from my wheel of pasta I received for Christmas
  


I browned the turkey and onions in a pan then added everything through the pasta. The pasta of course I cooked in a different pan. :) When the pasta was al dente (I love the word al dente it makes me feel so Italian when I cook I often say it when every I cook pasta, even if I am buy myself in the kitchen) I added it to the turkey mixture, and in to a casserole dish it went topped with bread crumbs and mozzarella cheese.





It tasted good for throwing together some items I had in the apt. John ate most of it so I guess in my book that counts as a success.
