Leftover

I still had some left over roast beef from Sunday dinner so John and I took the easy route tonight and just made some sandwiches. We both had to work late tonight and didn't get home until late. On my sandwich I had mustard, roast beef, tomato, lettuce, and pickles.


Notice that big hunk of cheese in the middle. Ok just wanted to point it out in case you missed it. ;) And of course with some chips on the side because no sandwich is complete with out chips.


It's 9:30pm and I'm off to bed early because I have to get up at 5am to go to work yuck.

Hummus wrap

Easy with no cooking that what tonight's dinner was about. John is away for work and I didn't feel like cooking so I decided to try and recreate a sandwich I sometimes buy for lunch. It has hummus, tomatoes, cucumbers, peppers, feta, and lettuce. I started with a tortilla

spread some hummus on

added some feta

and some tomatoes

some yellow peppers and lettuce


Then roll it up

Dinner served!

Southwestern chicken sandwiches

I was craving a chicken sandwich similar to the one I had a the other day when we met Cart out for dinner. This morning I marinated some chicken breast in the following:
  • 1 T of chili power
  • 1T of cumin
  • 2 cloves of crushed garlic
  • 1/4c of fresh chopped cliantro
  • 3/4c of evoo
Once home from work I grilled them on my grill pan (which is my new thing I am loving in the kitchen since we don't have easy access to the grill).


While I was waiting for the chicken to cook I ate some of this because I was starving!


I found these rolls at Whole Foods the other day and thought they looked good, I have never heard of this type of bread before. Brioche rolls?



Next melted some pepper jack cheese on top of the chicken, then cut in to smaller strips. Added the chicken, avocado and tomato to the sandwich.





For a side I made a cranberry, walnut, feta salad with some homemade balsamic dressing. It was delicious and hit the spot!

Grilled cheese & soup

My stomach wasn't to happy with me this afternoon so I wasn't hungry and nothing sounded good by the time dinner rolled around but knew I had to eat something. So I made myself a bland grilled cheese and tomato soup for dinner.



I hope I feel better by morning I have a ton of work to do this week! I apologize for the short post and non exciting dinner but you can check what I did so far with all those apples:

Applesauce

BLT & tomato soup

John finally sold his car!!! When he bought his new one he decided to try and sell his old one himself, the problem being it has special modification done so it needed a special buyer. Since he wasn't expected home until late I went ahead and made a childhood staple for dinner BLT sandwiches and tomato soup. I used organic bacon, tomatoes, lettuce, mayo and I toasted whole wheat bread.



I bought this soup on my grocery shopping run after work. I thought it was yummy but John had other thoughts, he prefers more tomato basil soup rather then just plain old tomato. Can't please them all! :)





I am excited about tomorrow dinner we have tickets to attend A Taste of Arlington!

Meatball sub

Waking up this morning was a bit tough for me with all the celebrating we did at the wedding last night. Before heading back to Boston we all (John, I and some of the brothers) decided that it would be a good idea to get some good hungover food at chili's down the street from the hotel. 6 of us piled in cars and headed to chili's, some immediately ordered bloody mary's and water I ordered my go to hung over drink coke. I was going to try and order something semi healthy off the menu but then I decided I was to hungover to do that so I ordered a buffalo chicken salad instead. It was delicious and just what I needed to make it in the car ride home.



Once I home I will admit it I went back to bed for a few hours. Once up and recovered John and I watched a few things we had to catch up on on our DVR and decided instead of making dinner (we didn't have anything to make anyways) we would order sandwiches from foodler. I ordered a meatball sub and John ordered a roast beef sandwich.
The food came and my meatball sub was yummy, the meatballs were homemade and delicious with lots of ooey gooey cheese. John's sandwich also looked pretty good I did not try a bite because I was to busy enjoying mine. :)

Sloppy Josephines

Tonight I am trying something completely different! On a daily basis I read a list of blogs all of which are food related but many different types of food. This recipe I got from Peas and Thank you a blog about a vegetarian/vegan family. I normally don't try things this different  I am always worried if John would eat it but I thought what the heck! This recipe was suppose to be a play off of sloppy joes. Here is what I used:

  • 1 c. dried lentils, rinsed and drained 
  • 4 c. chicken broth or water
  • 1/2 c. chopped onion
  • 2 cloves minced garlic
  • 1 T. chili powder
  • 2 t. oregano
  • 1 14 oz. can tomato sauce
  • 1/4 c. (approximately half a can) tomato paste
  • 1 T. red wine vinegar
  • 1 T. Worcestershire sauce
  • 1/4 c. barbecue sauce
  • salt and pepper to taste
  • pickle slices
  • whole wheat hamburger buns, split and toasted
Instructions
  • Bring broth or water to boil in a medium pot. Add lentils and cook until tender, approximately 30 minutes.
  • Drain and set aside.
  • Meanwhile, in a skillet that has been spritzed with oil or cooking spray, add onion and sauté lightly over medium heat until start to soften and brown.
  • Add garlic, chili powder and oregano and sauté for an additional minute or two.
  • Add tomato sauce, tomato paste, red wine vinegar, Worcestershire sauce and barbecue sauce.
  • Stir to combine and then add lentils.
  • Mix thoroughly and season to taste.
  • Scoop mixture onto toasted buns and garnish with pickles
I made a few changes because of what I had in my pantry so it wasn't completely vegetarian. I used chicken broth instead of veggie broth, and regular barbecue and worcestershire sauce instead of veggie and vegan friendly again because that is what I had in the pantry. For the rolls I used the whole wheat potato rolls which are 100 calories each. Growing up in PA I LOVE potato rolls, they make a sandwich that much better!!! When I found out they started making whole wheat ones that makes it even that much better.

The josephines were different... not bad but not great. I would eat them again I think it was just a different taste. John thought they were good, he said the beans added a different texture then he was use to. Since the rolls were the tiny ones (they don't make dinner size in the whole wheat) for the 2nd one he added a slice of cheese to the top and said he liked it much better.

Schwartz's

So I know this is suppose a dinner only blog, but I have to share this delightful little find that John and I tried while in Montreal. Before we left for our trip John googled things to do while in Montreal and found that a placed called Schwartz's was a must do and was famous for their smoked meats. Friday morning John and I got up and ate breakfast at the hotel and then headed out to walk around the city. We decided to walk in the direction that Schwartz's is in, turns out there is a ton of shopping. I am not a huge shopper but it was still nice to walk around and see all the shops. After walking for about about an hour we arrived at our destination. We walked in and were surprised at how busy it was! The was only one wall of tables so everyone was crammed in together. John and I were ushered to sit at a 4 person table with 2 locals. The waiter immediately came to our table and asked what we wanted, there was no formal menu so we were thrown a little off guard. He suggested we ordered the smoked meat sandwich which was their most popular dish.


As side dishes we ordered fries and a pickle each. The fries were once again the skinny fires which were delicious they had a different taste to them it might be a seasoning or the oil they fry them in? The pickles were also very good they were more a sour dill taste. On to the sandwich it might have been the best deli sandwich ever. John's friend Cart has a challenger for his New York sandwich. The meat was pastrami with a delicious pepper crust served on rye bread. 

   
If you are ever in Montreal and are looking for a good deli sandwich and don't mind sitting at the same table with locals I highly recommend this place.
