Blueberry Smoothie

I know it's the weather is starting to change and the mornings are becoming cooler. I should have came out with this post a while ago when it was a sorcher outside, but I just now have perfected my recipe.

I am not a big smoothie person I've tried many different kinds with different ingredients but nothing stuck. They either had to much ice, to watery, not enough fruit, not creamy enough, you get the picture. Well I think I finally found one that makes me a happy girl. And here it is:


  • 1/2 c oats
  • 1 c coconut water or any fruit juice you want
  • 1/2 c plain greek yogurt
  • 1/2 c frozen fruit of your liking 
  • 1 banana
  • 1 c ice
  • 1T honey
  • small scoop of chia seeds
Mix it all together in a blender and enjoy! This morning I made myself one with blueberries.

Egg breakfast sandwich

Today on the schedule was a 7 mile run so after work I changed immediately and headed out the door. When i got back from my run I had a text message informing me that  John won't be home until late which means I was off the hook for dinner. So I decided an breakfast sandwich was in order.
Ham, spicy cheese and egg with a little ketchup.




 On the side I had some blueberries


and started with half a grapefruit but then ended up eating the whole thing.

Pancakes

I know I discussed my love of breakfast foods on here before, and I must say it's a sad sad thing that John does not enjoy them, which still boggles my mind! Since he was working late this evening I took the liberty of making these for myself.








They were sooo good!  I made 6 and a mini which means I have leftovers for breakfast!

The Kitchen House

I bought a book for my kindle today called The Kitchen House I started reading it on the T ride to work and on the way home, when I got home I couldn't put it down!


I didn't put the book down until John came home at 10:30pm!! I forgot to eat dinner I was so wrapped up in the book I didn't even think about it. So when John got home it was late and I didn't want to eat anything heavy so I just had a small bowl of cinnamon chex.


I'm spending the rest of the evening catching up with my boyfriend since he's been gone all week.

Pancakes!!

Continuing the theme from last night I ate breakfast food for dinner again tonight, pancakes!! I haven't had pancakes in I can't tell you how long. I made them from a mix I had in the pantry that I obviously hardly use.

For the maple syrup I used pure maple syrup from New Hampshire. Last year I accompanied John and his family to a syrup bake or maple bake I can't remember what exactly it called. But it is a fantastic excuse to get friends and family together and boil sap that comes from the maple trees, along with eating maple syrup flavored ice, maple candy, maple donuts, maple flavored baked beans I'm sure you get the point. (Sap boiling party, that's what it's called!)


I also reheated some of the eggs I had leftover from last nights dinner. 




I'm off to occupy the couch to watch NCIS Wednesdays :)

Omelet sandwich & yogurt

Breakfast food is amazing I love starting my morning off with an omelet or french toast or pancakes or a big bowl of oatmeal. John hates breakfast especially eggs he not only can't eat them but he can't even stand the smell, he is so weird.
So since he is away on a business trip this week its a prefect opportunity to eat an omelet. For dinner tonight I made an omelet sandwich, in my omelet I added tomatoes, onions, and green peppers.



I put the omelet on 2 pieces of whole wheat toast and added cheese and ketchup.Yup I'm a ketchup and egg person.



I also had some cherry yogurt with some granola on top.



Tomorrow is hump day already!
