I had huge amounts of chili leftover from Sunday so I froze some and some I decided to stuff into peppers. A quick and easy dinner, I am having one of those weeks where I just don't feel like cooking. So I took 2 peppers cut the tops off de-seeded them and stuffed them with leftover chili. Then bake at 375 for 30 mins or so until peppers are cooked.
