Tomatoes, Sausage, and Romano Pasta

I'm tired I needed a quick and easy dinner it was a long day back at work after being on vacation. I made this pasta dish before when my friend Sarah was visiting and she loved it! So I figured I make it again tonight since it was a quick meal to throw together. What I used:
  • whole wheat pasta of your choice (I used linguine noodles)
  • 1 can of diced tomatoes (your choice of flavor I used fire roasted)
  • 1 onion cut into slices
  • organic jalapeno chicken sausage (or sausage of your choice)
  • 2 cloves of minced garlic
  • 2 tablespoons of Ramano cheese or you can use Parmesan 
  • Italian spices, (red chili flakes if you want the dish spicy)
  • salt and pepper to taste
  1. Cook pasta 
  2. In pan cook onions and sausage
  3. Once onions and sausage is cooked most of the way through add garlic and spices, let cook until sausage is cooked through
  4. Next add the tomatoes, cheese and cooked pasta and let simmer for a few minutes top with fresh basil and some grated cheese
  5. Enjoy!!




It was just as good as I remember, but of course John had to add more hot red pepper flakes. :)  Early bed time for me tonight, still recuperating from vacation! Sometimes I feel as if you need a vacation after your vacation. ;)

I didn't cook last night since John wasn't home ;) I just didn't get around to posting it yet, it's up now! :)
