Meatloaf & spicy fries

I have been wanting to make meatloaf for a while but I was holding off because John doesn't care for meatloaf to much. But then I decided what the heck he'll eat anything I make. :) I discovered this recipe a while ago and have been making it ever since it is pretty fantastic. It makes the meatloaf moist and juicy and has really good flavor with only a few simple ingredients! All you need to do is mix hamburger, salsa, breadcrumbs, cheddar cheese and an egg together and form into a loaf and bake at 350 for about 45 minutes or until cooked through.


For the fries I cut up a potato and added a tablespoon of olive oil and taco seasoning with a little bit of cayenne pepper. This is the first time I made these I had a little trouble with them sticking to the baking pan because I didn't add enough cooking spray. :( But they turned out good anyways. John really enjoyed both the meatloaf and fries I think I changed his mind on meatloaf. :)
