Today my sister left to go home :( I had such a great time while she was here, we don't get to spend much time together since we live so far apart. I haven't gone grocery shopping in a long time so I didn't have much for dinner. SO looking around the cabinets and freezer the only things I had was pasta and frozen peppers so I googled peppers and pasta to see what I could find. I came across this recipe that used salsa, peppers, onions and balsamic vinegar now it didn't sound to appealing but I thought what the heck maybe it taste good. So I put the noodles on to cook and in a frying pan I added some of the peppers, onions salsa and once it was cooked through I added some balsamic vinegar. I tasted it and it was awful!!! Thinking maybe it was just me I had John taste it too but he only confirmed it. Here's the recipe if you want to give it a try but I don not recommend it!!
12 oz. ziti, penne, or other medium pasta
2 tablespoons olive oil
1 large onion, chopped
1 green bell pepper, cut into short thin strips
1 red bell pepper, cut into short, thin strips
1 yellow bell pepper, cut into short, thin strips
1 tablespoons minced garlic
1 teaspoon dried basil or 1 tablespoon minced fresh basil
1/2 teaspoon dried oregano or 1 1/2 teaspoons minced fresh oregano
8 ounces prepared salsa
2 tablespoons balsamic vinegar
1/4 cup grated Parmesan cheese
I hate to throw food away but there was no way this sauce was edible, so plain tomato basil sauce it is! We had some left over corn on the cob and some tomatoes and cucumbers on the side with the pasta. Kind of a throw together dinner night.
The next 2 nights we have plans for restaurant week.
