Chicken souvlaki salad

? What is soluvlaki, I have never heard of this type of food before. Turns out it is:
a popular Greek fast food consisting of small pieces of meat and sometimes vegetables grilled on a skewer (source)

John picked this recipe for one of our meals this week. The picture looked good and I liked all the ingredients so why not. You start by combining these ingredients and pouring them in a bag or a bowl.

  • 2 teaspoons bottled minced garlic, divided
  • 1 teaspoon fresh lemon juice 
  • 1 teaspoon extra-virgin olive oil 
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Coat chicken breast in mixture until well coated and grill until cook through.


 While chicken is cooking cut these things and add to a bowl.
  • 3 cups cubed peeled cucumber (about 3 cucumbers) 
  • 1/2 cup vertically sliced red onion 
  • 1/2 cup (2 ounces) crumbled feta cheese 
  • 2 tablespoons chopped pitted kalamata olives
  • 2 ripe tomatoes, cored and cut into 1-inch pieces
Then in separate bowl mix these:
  • 1/2 cup plain fat-free yogurt 
  • 1/4 cup grated peeled cucumber 
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon black pepper

Then once chicken is done mix it in with the cut veggies and then pour sauce on top mixing thoroughly. Then serve.





We had ours with a side of garlic naan bread.


 It was a good meal, not to heavy it would be great for dinner in the summer when it's hot. John picked another winner! If he's not carefully he might be meal planning more often. ;)
