Meatloaf and Annie's mac & cheese w/peas

John left early this morning to fly down to DC for work for a conference, he comes back Wednesday evening then he is off again early Monday morning for all of next week. That leaves me alone for a lot of dinners, he asked me what I was going to blog about since I only eat pasta when he's gone. :) Hahaaaaa no I don't....

ok, I guess he's right this time...

I proved him wrong tonight I made meatloaf for dinner! I love this meatloaf recipe, I was never a lover of meatloaf growing up I would cover it in ketchup just to eat it but, since I found this recipe I could eat a whole one by myself ;) and it's good for leftover meatloaf sandwiches. Mmmm

Ingredients (from all recipes website)

  • 1 pound ground beef sirloin
  • 1/2 cup salsa
  • 1/2 cup Italian seasoned bread crumbs
  • 1/2 cup shredded Cheddar cheese
  • 1 egg, lightly beaten
  • 3 cloves garlic, minced
  • dried parsley to taste
  • salt and pepper to taste
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5x9 inch loaf pan.
  3. Bake 45 minutes in the preheated oven, or to a minimum internal temperature of 160 degrees F (72 degrees C).

For a side I decided on Annie white cheddar & shells in which I added peas to get a veggie in.

So you did end up eating Pasta! Just as a side dish not the main course!
