Salsa chicken

Home cooked mexican food was the theme for the evening. I had bought some chicken at the grocery store this week and wasn't sure what I was going to do with it until I decided I was hungry for mexican food.
I took the chicken breast and coated them in taco seasoning and placed them in a pan. (like shake and bake, but with better tasting results)


Then cover in salsa of your choice, I chose Newman's own hot salsa. 


Bake in the oven on 375 until chicken is cooked through, then add cheese and some chopped green onions and any additional topping of your choice olives would be a good addition. Then place in the oven until the cheese is melted.



For sides I made rice and corn.


Dinner was yummy! I think I put to much on my plate because now I am to stuffed to move.



Are your wondering why my pictures are much clearer than before? Well let me tell you :) John knew I was struggling with my camera it would take wonderful outdoor pictures but food pictures was a completely different story. I could never get the camera to focus, after doing some research John found that it was a flaw with the camera. :(  John being the wonderful boyfriend that he is took the time and bought a better camera. Now I have been learning to use it to take my dinner pictures, so now my pictures are now no longer blurry but now I have to learn how to take good pictures. :)

Tomorrow evening John and I have plans to go to the Red Sox game with our friends Jared and Jocelyn!

First of all I make this same exact thing except without the delicious cheese cause it's a diet recipe.

second how did you make your banner for the top of your blog. I'm trying to do something similar and have no idea how.
