Tonight's dinner was combining what I had in the pantry black beans, diced tomatoes and corn on the cob. I wasn't quite sure to make with these things but then I decided on spicy beans and add some quinoa on the side. The ingredients:
I diced up the onions and jalapeno pepper and sauteed them in the pan.
Once they were cooked I added in the tomatoes, corn and black beans.
I cooked the quinoa in a separate sauce pan in chicken stock. Quinoa has a little bit of a natural nutty flavor when I cook it in the chicken stock the nutty flavor isn't as strong as when cooked in water.
When everything was cooked I mixed it together and added a little feta on top because everything is betta with feta. :)
